Quince jelly, second attempt

September 20, 2026

Jars of amber quince jelly on a windowsill

Last year's batch never set. This time I cooked the fruit with the skins and cores, let the pulp drip overnight through an old pillowcase and did not squeeze it.

Equal weight of juice and sugar, a rolling boil, and the wrinkle test on a cold saucer after about twenty minutes. It turned the colour of a sunset and set firm in the jars.
